Sometimes you just feel like ice cream

I had an extreme craving for ice cream the other night, and anybody who's ever had a craving like this before knows you can't just ignore it! Since we didn't have any ice cream at home, my dad, Lola and I headed out the door to Main Plaza Convenient Store. It's about 3 blocks from our condo, and the evening couldn't have been lovelier for a walk. When we got to the store the worker said Lola could come in, which was really cool! He even didn't care that I was one penny short when paying. That's just two more reasons why we like this convenient store way more than Hippos (another convenient store that is closer to our condo, but has fewer options and is extremely over priced).

After we got our 2 pints of ice cream and an ice cream bar (don't judge-- we didn't eat both pints in one night) that my dad at while inside the store, we headed to Main Plaza to take pictures of the cathedral and water fountains. The fountains have been shut off for the winter months, but as of a few weeks ago they turned them back on. They aren't anything terrific like the Bellagio Fountains in Las Vegas, but they are still pretty cool to look at and photograph.

It's nice to be spontaneous once in a while. It almost always results in a lot of fun! I will remember nights like these for the rest of my life.

City Sites


San Antonio is big, busy, full of tourists and jammed packed with traffic almost always. Despite the downsides, this city is my hometown and it's where I feel most comfortable. I have so many memories here, and although lately I've caught myself saying I wouldn't mind moving I think if it really ever came to pass it would be very tough to actually do.

Back on the Saddle

A few weeks ago, I orded a full face helmet on eBay. A friend recommend this helmet to me, so I thought I'd give it a try. It's lightweight, girly and totally awesome! I must say I look pretty gnarly in it too! I think people think I must be a pro who can do all these sick bmx style tricks, when they see me with this intense full face helmet on!

Last night, Andy and I went to OP Schnabel Park and rode some trails before the sunset. We took it slow and rode the easier trails since this was only my second time back on the bike since my accident.

I wish I would have taken my camera on the ride with me because we saw a ton of deer. Some were big and strong and others so small, like bambi!

One of the many things I enjoy about mountain biking is being in nature. I love when I feel the wind on my face (although my new helmet definitely hinders this), feel the sun on my skin and when I'm lucky, like last night, see the wildlife run around!

It's a free activity that makes me happy and reminds me of how beautiful the outdoors is!

Liberty Bar

My all time favorite restaurant in Southtown is Liberty Bar. The cute coral colored building, cosy interior, amazing cheese plate and lovely wood floors are what make it the best restaurant downtown!

White Chocolate, Cranberry & Walnut Pumpkin Spice Cookies

A few months ago I came up with this rockin' recipe. Not only is it easy, it tastes deliciously homemade too. So here's what you need...

Shopping List:
  1. Betty Crocker Pumpkin Spice Cookie mix 
  2. 1 Egg
  3. 1 stick of butter
  4. 1/2 cup of cranberries
  5. 2/3 cup of white chocolate chips
  6. 1/2 cup of chopped walnuts (or nuts of your choice)

What to do:

Preheat oven to 375 degrees. 

Mix into a large bowl egg, butter and 2 tablespoons of water.


Measure out the cranberries, walnuts, and chocolate.

Chop walnuts (skip if you bought pre-chopped walnuts).

Pour into dough mixture.


Stir until mixed well.  
Then bake on a stone for for 12 minutes until golden brown on the edges.

Let cool before transferring to a tray. Then enjoy!

Pam's Patio

So there's this little restaurant I love called Pams Patio. It's this small restaurant that has a cute patio and some of the best sandwiches I've tasted in San Antonio. My favorite sandwiches on the menu are Claire's Turkey Avocado or Val's SpecialSandwich. The best part of ordering a sandwich is that they serve them with a  mango avocado salsa. It's a little spicy and a little sweet, but the combination is just perfect. And I better not forget to mention that they have the best fresh strawberry lemonade!

This past Saturday I went by Pam's to have lunch with a couple of friends. We shared some nachos and each ordered a different sandwich. We enjoyed the food and each others company.

 It was a great time!

Sunday Morning

Sunday morning Andy and I swung by Corner Bakery picked up breakfast and then headed over to my dad's strip center to eat and do some cleaning and maintenance. We had a great day together! But then again, we always do :)
